Nut Butter Stuffed Dates

Ahhhhh… Nut butter stuffed dates. I love them SO much. Who knew a little date could bring so much joy! I really need to get out more. No seriously, these dates are a little morsel of heaven! I only have them as a treat as medjool dates are on the pricey side, but that makes them even more special. Sometimes apple and peanut butter just doesn’t hit the spot! The flavours and textures dance around in your mouth with delight. There’s nothing like sticky sweet caramel-like dates with creamy, nutty, gooey peanut butter. It’s a match made in food heaven. Peanut Butter is of course the ultimate nut butter to eat with anything. I must be about 80% peanut butter at any given time. Of course, you can use any nut butter your heart desires! And you can even use tahini if you don’t like or are allergic to nuts! Dates are awesome too. They are nature’s candy and are basically tiny nuggets of healthy caramel. HEALTHY CARAMEL. Yes, dates are good for you in moderation. Essential vitamins, minerals and fibre are all found in this tiny fruit! This just gets better and better! Using a natural nut butter keeps the health benefits coming. Try to use one which is as close to 100% nuts as possible. Processed ones usually contain added sugar, salt and oil. A big no no! I love them with chopped dark chocolate and a sprinkle of sea salt. Seriously, it’s next level on the stuffed date scale! What blows my mind about these dates is: one, it’s the best recipe on this blog which isn’t technically a recipe and two, the simplicity. Is there any other snack in the world that is healthy, delicious, indulgent and takes one minute to make?!

Ingredients

Medjool Dates
Nut butter, about 1 tsp per date (peanut butter is bae)
Toppings of your choice
(I love them with chopped dark chocolate and a sprinkle of sea salt!
You could also use: melted chocolate, cacao nibs, sprinkle of cacao powder, cinnamon, nuts, cranberries, desiccated coconut)

So simple. So yum

Method

  1. Carefully pit the dates by making a slit along each one, without totally cutting it in half, and removing the stone.
  2. Peel them open and fill the centre generously with nut butter.
  3. Press together and add any additional toppings you like.
  4. Scoff the whole lot or to leave to firm up in the fridge. They freeze great too!
