Since changing my diet, I can’t remember when I last had a sandwich (which is a good thing because I hate sandwiches!). Even though I ate them every day at school, I’ve never really been a sandwich person. Like breakfast is so much more than a bowl of cereal, lunch can be loads more exciting than a boring old sandwich. I love love love this combination! Creamy guac with a hint of lime and chilli with the sweetness of the paprika roasted sweet potato topped with crunchy peanuts and of course a drizzle of peanut butter.
