PB & J Toast

Peanut butter and jelly. Name a better combo? If you’re anything like me, you are nuts about peanut butter. Add some warm raspberry compote ‘jelly’ and you’ve died and gone to peanutbutterjelly heaven. Even if you aren’t having a good day and it seems like the whole world is against you, stop feeling sorry for yourself and go make this RIGHT NOW. If you are having a good day, don’t let it stop there!! Honestly, if you aren’t dancing around your kitchen to Peanut Butter Jelly whilst demolishing this, you’re not living!

There is absolutely NOTHING unhealthy about this recipe. As long as you use a natural peanut butter which is 100% nuts or 99.9% nuts with a tiny bit of salt, instead of the processed ones with added oils (most likely palm oil), sugar and additives. The raspberry jelly has 2 ingredients with no refined sugars. So you know this delicious breakfast really is doing you good!

Peanuts are packed full of protein, healthy mono and poly unsaturated fats as well as an array of vitamins and minerals including B vitamins, vitamin E, magnesium, iron and zinc.

This recipe is naturally vegan, dairy-free and refined sugar-free. Make it gluten-free too using a tasty gluten-free bread!

Ingredients

Bread, toasted
50g frozen raspberries (per slice of toast)
1 tsp Maple syrup
Loads of peanut butter

Sprinkle of Granola, optional
Banana Slices, optional

Method

  1. To make the raspberry compote ‘jelly’, simply add the raspberries and maple syrup to a saucepan and heat until stewed and jammy looking, mashing any lumps with a fork. Add some more maple if you prefer it sweeter.
  2. Take your toast and spread over a VERY generous layer of peanut butter.
  3. Top with the warm raspberry compote and scoff it all just like that or add a sprinkle of granola, banana slices or any other of your favourite toppings.
  4. Dance around the room in delight!! Song to go with it below! You’re welcome 😉

TIPS

  • Prefer a thicker jelly consistency? Add some chia seeds and let it sit for 5-10 minutes. (tbh who can wait that long!)
  • You can use any frozen berries you like for the compote jelly. Fresh berries would work too.
  • Turn it into a sandwich by pressing another slice of bread/toast on top.
  • Make it gluten-free using GF bread. I like Schar’s Vitality Loaf.
  • My favourite peanut butters are Meridian and Pip & Nut.
  • Swap the peanut butter for almond butter if you prefer!
